Rolling Lion Food Truck Makes Appearance on Pollock Road
UNIVERSITY PARK, Pa. — A smoky pulled pork sandwich and a zesty beef taco were the menu options for the Rolling Lion, Penn State Campus Catering’s food truck, when it made one of its three appearances of the week on Tuesday afternoon on Pollock Road across from the Willard Building.
The food truck began operations last year during football games, and this year it will make appearances at different places around campus with a rotating menu that will change weekly. Starbucks coffee, Creamery ice cream and premade sandwiches are available for those who want a quick snack or drink between classes.
Marissa Schaeffer, the Rolling Lion’s managing chef, is excited about the rotating food options and the rotating locations because it gives a large group of students the ability to decide which menu items are their favorites, which can help build the brand and popularity of the truck.
In addition to the location across from Willard, the truck plans to set up shop in front of the Shields Building for a pregame treat before football games. The Rolling Lion also offers catering options for clubs of at least 50 people, who can request a customized menu for their next event for a $500 charge.
Like most Campus Dining establishments, the truck doesn’t accept cash and only takes credit cards, LionCash and meal points.
